I use the ones with optional sound suppression, with cables. These are becoming brittle with time. Other stuff like the ear pads can be easily replaced with spares from the net. Sound quality is great. Maybe, after 20 years of service, they can be allowed to fail.

Your data sets are somewhat equal to partitions. Only they do not use space allocated once at system partition time but will allocate the storage needed from the zpool under it. They also contain settings which influence data safety (copies=X, compression, ...)

Simply the idea of not caring about partitions is great. How often did you have to move directories around and added links because /var, /usr or somesuch ran out of disk space? With ZFS that is not a problem.

Depends on the write speed. How many [ms] per write is reported? If it is, say, 50ms - then you are looking at about a second latency for writes to the pool. This is optimized for troughput, not latency.
