Solved Poudriere release specific ports tree

How does one configure a poudriere ports tree for a release other than that of the host. For example, I wish to build packages for 11.3 after it is deprecated. How do I tell poudriere to pull the 11.3 ports tree? I cannot find an option for the command poudriere ports -u -p PORTS-11-3 to specify what release to pull for.
 
Does this mean that all previous versions of a particular port as provided with a specific release are retained?
 
Third party application (ports) versions are not "bound" to specific FreeBSD versions as is common with a lot of Linux distributions for example.

There are only a few instances when a specific port requires a minimal FreeBSD version. This has to do with (kernel) features that are simply not available on older FreeBSD versions. But for 99.99% of the ports this is not relevant.
