Well but Cadillac lets you choose your color etc. Apple not, you have to go with their hardware.

So Apple is like Ford?

On the topic, I would like to have a good set of Objective-C UI applications, even just for comparison. Maybe it is the way to get the much-asked-for FreeBSD Desktop?
 
Asking why Apple doesn't have a thousand desktop choices is like asking why McDonald's doesn't serve spaghetti. The answer is "they don't want to," and in Apple's case it's not hard to understand why. For one thing, people like that GUI. For another, there are a lot of advantages to ensuring that your employees and customers are all using identical hardware and software.

If you search around, though, you can find examples of people using X11 GUIs on OS X. Here, for example.
