I have one question (I did search) about what to put in /etc/rc.conf:

firewall_logdeny="YES"

or

firewall_logging="YES"

or both?

Depends on what you're trying to accomplish.

(edit) When in doubt just check /etc/defaults/rc.conf which explains all default available variables.
