A stable version of BIND is included in base system. There is no need to install it via ports until and unless you want really new stuff. Try running portsnap before running make. Also see UPDATING file in /usr/ports directory and search for BIND
I really miss vmware server on Freebsd. Older version used to run but they dropped the support after version 4. Virtualbox is good choice. XEN will run in dom0 under FreeBSD 8.0.
You can throttle user login with pf itself. By default root login is not allowed. Only normal user can login over ssh and su - them. However, most hosting companies changes this so that root can get into it. Take a look at my previous security thread...

portnsap fetch update
portmaster -Da

I've used both 3ware and Adaptec raid controller. No problem what soever. However, most of my boxes are in RAID10 or RAID1 configuration. Unfortunately ITX wasn't enough for our work load. So we end up with high end server.
Backup the system before you do this. I've successfully upgraded my Gnome desktop from 7.2 to 8RC3. I'm also assuming that you are using portsnap and portmaster to manage apps. Here is how I did it:
Edit supfile and make sure tag set to RELENG 8 (this will get RC3):
