You might want to pick a mirror nearest to you for better download speeds.
I'd go with RELENG_8_0 as well until you're familiar enough to solve problems that come up. It's stable enough, and you shouldn't be missing any major features.
As far as I know, L7 filtering isn't reliable and accurate all the time, so not many applications support it (might have a big impact on performance as well). Perhaps just blocking the port or IPs would be sufficient.
It looks like you didn't configure userdb prefetch properly. Try taking a look at Prefetch User Database.
Also, do dovecot -n if you want to paste Dovecot's configuration.
It's quite true that greylisting does cause problems since some mail servers don't retry.
However, this shouldn't be a problem since Postgrey keeps a whitelist of servers that have problems.
Although I agree with fronclynne, I think a community wiki would be a great idea. This way, people can contribute docs easily, without going through the process of submitting PRs and waiting for someone to commit the changes.

I just skimmed through the upgrade notes, and it seems that the changes shouldn't affect too many people. Most of them are just new features.

Alex (the maintainer) stated on freebsd-ports@ that the devs of PHP told him that support for 5.2 will be dropped soon, so there won't be a port for PHP 5.2.
