    Wow! Thanks for all of the ideas and great information! I'm going to look into ZFS and go from there. As far as using gparted, growing the fs is by far the easiest thing for me. I just shutdown the vm, extend the disk using vmkfstools, boot the server using gparted and extend it - done...
